Passe os dois lados do filé na farinha de trigo. Passe um lado do filé no ovo e na quinoa. Esquente a frigideira, coloque um pouco de azeite para fritar. Coloque o filé do lado da quinoa e deixe até tostar. Fique observando, pois tosta muito rápido. Vire o filé e observe até ficar douradinho.&lt;br /&gt;&lt;br /&gt;- Julienne de Legumes&lt;br /&gt;&lt;br /&gt;INGREDIENTES&lt;br /&gt;&lt;br /&gt;1 colher de Azeite de Especiarias&lt;br /&gt;½ cenoura&lt;br /&gt;½ alho poró&lt;br /&gt;½ aipo&lt;br /&gt;Molho Vinagrete&lt;br /&gt;&lt;br /&gt;MODO DE PREPARO&lt;br /&gt;&lt;br /&gt;Corte a cenoura, o alho poró e o aipo em tirinhas bem finas. Refogue os legumes rapidamente na mesma frigideira em que dourou o filé. Tempere com sal e pimenta a gosto. Os legumes devem ficar al dente, ou seja, cozidos porém com textura. Passa muito rápido na frigideira, somente para “suar”. Coloque um pouco do molho Vinagrete. Na hora de servir, salpicar a batata palha ou servir com a batata a parte para manter a salada crocante. Deixe o filé marinando durante meia hora na geladeira, virando o filé de vez em quando. Retire o filé, tempere com pouco de sal e pimenta do reino a gosto.&lt;br /&gt;Coloque o gergelim num prato pequeno plano espalhando uniformemente. Cubra o filé de um lado a outro com uma bela crosta de gergelim. Esquente uma frigideira a uma temperatura média, coloque uma colher de sopa de azeite e grelhe o filé primeiro nos lados sem gergelim durante 2 minutos cada.&lt;br /&gt;Depois grelhe brevemente os lados de gergelim sem danificá-los. Retire o filé e conserve Coloque 1 colher de sopa de azeite na mesma frigideira, numa temperatura alta e acrescente os shitakes refogando durante 2 minutos. Junte o vinho branco, 4 colheres de sopa de molho shoyu, pimenta do reino a gosto e deixe ferver por mais um minuto.&lt;br /&gt;Tire os shitakes, conserve e deixe reduzir o molho mais um tempo e acrescente ½ colher de sopa de manteiga para dar liga e brilho.&lt;br /&gt;Numa outra panela esquente ½ colher de sopa de azeite e ½ colher de sopa de manteiga e refogue o espinafre durante 3 minutos tempere com pouco sal e pimenta do reino e junte os shitakes refogados.&lt;br /&gt;Para montar o prato coloque primeiro a mistura de shitakes e espinafre no centro do prato. Depois corte o filé de atum em fatias de um centímetro mostrando a parte crua. Coloque as fatias alinhadas em cima dos legumes. Depois regue e decore o filet de atum e o prato com o molho de shoyu. Acompanha ½ limão e a batata baroa palha.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;OBS:&lt;/strong&gt;Cuidado com o sal pois existem vários tipos de shoyu que são muito salgados&lt;br /&gt;*1 O atum é comido de preferência mal passado com a parte interna crua. Coloque-as em uma tigela com água e sal. Reserve. Em uma panela, coloque as cenouras, o leite e o sal. Leve ao fogo baixo por 25 minutos, ou até as cenouras ficarem macias. Transfira para o liquidificador e bata até ficar homogêneo. Volte para a panela, junte a maisena, a páprica e acerte o sal. Misture, leve ao fogo e cozinhe, sem parar de mexer, até encorpar. Retire do fogo e deixe amornar. Reserve. Em uma tigela, coloque o iogurte, a ricota, as ervas e misture até ficar homogêneo. Escorra as batatas, coloque em uma tigela e tempere com o azeite, o alecrim e o sal. Divida as batatas em 3 partes. Montagem: forre um refratário de 30 cm de diâmetro com uma parte das batatas. Em seguida, coloque o creme de cenoura, mais uma camada de batatas e o creme de ervas. Por último, coloque uma camada de batatas. Cubra a torta com a farinha de rosca misturada com o queijo. Leve ao forno médio e asse por 1 hora, ou até as batatas ficarem macias e a cobertura dourada.&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span class="subtitulo"&gt;Dicas:&lt;/span&gt;         &lt;br /&gt;&lt;span class="inbox"&gt;  Para uma opção rápida, cozinhe 8 batatas pequenas e corte-as em rodelas. Enquanto isso, corte 3-4 tomates, sem pele e sem sementes, em rodelas e tempere com azeite de oliva, vinagre e sal. Corte 2 cebolas em rodelas e tempere da mesma forma que os tomates. Coloque em um refratário 1 camada de tomates, 1 de batata e 1 de cebola. Cubra com fatias de presunto cozido e mussarela. Repita a operação até esgotarem todos os ingredientes, terminando com a mussarela. Leve ao forno até o queijo derreter. Pressione a mistura para cobrir (fundo e laterais) de um pirex redondo. &lt;/o:p&gt;                      &lt;p class="MsoNormal"&gt;- 3 pés de folhas de sua preferência (rucula, frissê, alface mimosa por exemplo)&lt;br /&gt;- 1 cx de figo fresco&lt;br /&gt;- 1 xic de azeite&lt;br /&gt;- 1 xic de óleo de milho&lt;br /&gt;- 1/4 de xic de vinagre balsâmico&lt;br /&gt;-1 colher de chá rasa de sal&lt;br /&gt;-1 colher de sopa rasa de açúcar mascavo ( de preferência)&lt;br /&gt;- pimenta do reino moída na hora (opcional)&lt;br /&gt;- 300 g de queijo brie, se poder comprar o francês mesmo incrível, se não com o brasileiro também faz sucesso.&lt;br /&gt;-100 g de amêndoa laminada torrada.&lt;o:p&gt;&lt;br /&gt;&lt;/o:p&gt;&lt;/p&gt;    &lt;p class="MsoNormal"&gt;Modo de preparar:&lt;o:p&gt;&lt;br /&gt;&lt;/o:p&gt;&lt;/p&gt;              &lt;p class="MsoNormal"&gt;- Lavar as folhas.&lt;br /&gt;- Cortar os figos ao meio e com uma colher de sobremesa retirar a sua polpa.&lt;br /&gt;- Amassar com o garfo, adicionar o vinagre, o sal e o açúcar (a acidez ajuda dissolver melhor estes dois ingredientes).&lt;br /&gt;- Com um batedor de arame ( fouet) ou mesmo com o garfo vá juntando o azeite e o óleo em fio para emulsificar o molho.&lt;br /&gt;- Corte o queijo brie e fatias finas.&lt;br /&gt;- Em uma saladeira, arrume as folhas, tempere com o molho, depois junte o queijo brie e por ultimo finalize com as amêndoas.&lt;o:p&gt;&lt;br /&gt;&lt;/o:p&gt;&lt;/p&gt; Tempere as postas de salmão com 1 colher (sopa) de azeite, suco de 1 limão e sal.&lt;br /&gt;2. Leve à frigideira com 3 colheres (sopa) de azeite até o peixe dourar dos dois lados. Reserve.&lt;br /&gt;3. Bata no liqüidificador a polpa dos maracujás e o suco de laranja.&lt;br /&gt;4. Coe o suco e acrescente a maionese, mexendo até obter uma mistura homogênea.&lt;br /&gt;5. Junte 2 colheres (sopa) de suco de limão, o açúcar e o sal, misture bem.&lt;br /&gt;6. Corte o peixe em pedaços e sirva dentro da casca do maracujá.&lt;br /&gt;7.
